My name is Gitte and I’m from Denmark. I live in the US with my wonderful family and I enjoy recreating classic, as well as modern Danish recipes and also trying out other Scandinavian and American dishes. Learning to bake in a foreign country using unfamiliar ingredients and trying to navigate translations and conversions has been challenging. What I have tried to do with my blog is to translate not only recipe ingredients and instructions but also convert from metric to standard measurements and I hope this will be helpful to anyone wanting to bake Scandinavian recipes. My blog consist of mostly baked goods but you may also encounter some good home cooking, from time to time. I hope you enjoy this site and feel free to stop in anytime.

Hi Gitte, I have used your recipes time and time again but not commented before and thought it was about time I did. Hi, I used to live in Denmark and I miss (among other things) the rugbrod and the bakeries. I’m going to give it a try, I didn’t know it took so much preparation. I tried the Ikea one without good results.
Ale, your right it does take quite a bit of prep work but I hope you like the Rugbrød.
Tried Rugbrod today. It was great, but my next try will be even better. It will be a staple around our home.
I am nearly 80 years old and have some significant health problems which were nearly fatal. As a result I started baking my own bread. In the last couple of years I have become a pretty fair baker, for an old man. Lost 100 pounds in the process, and my health is much better.
do you have any other Danish breads you could recommend?

I don’t have other Danish breads to recommend at this time but I am always looking out for delicious recipes. Rugbrød is really the big staple in Danish households and I’m sure I’ll be baking more new bread recipes from time to time but they may, or may not necessarily be Danish.
If you are near a Korean community you can get the meat for stegt flaesk. Here in Chicago we have H-Mart. Æbler med flask. My childhood favorite! Hils, Erik.
I am anow American removed from my Danish roots by two generations on one side and three on the other, yet I have never heard a word of Danish or eaten a Danish meal. With your site and others I might find I hope to remedy the latter at least. My dream is to visit Denmark before I die so that I can also hear my ancestral tongue. Thank you for helping to keep your native traditions alive.

Wonderful blog! I can absolutely relate to the challenges you mention of cooking in another country. I felt the same way when I relocated. While it might not have been a different country, some of the differences between northern and southern cuisine are like night and day.

I’m an American studying abroad in Copenhagen until May and loving everything about Denmark, and of course the food. My host family often cooks traditional meals, a lot of which I have found recipes for on your blog and I am loving that! Recently, we have been trying to make the perfect flødeboller…we’re on trial 4 and still haven’t gotten things quite right. Have you ever tried making them? You seem to be so successful at all of the other Danish treats so I thought I’d ask! I have loved reading through your blog – can’t wait to bring these recipes back with me when I return to the States. 🙂

Ah yes, flødeboller 🙂 I have made them and they were delicious, but they didn’t make it into the blog. They are back on my to-do-list and maybe one of these days I’ll actually get around to making them again. In the meantime, try different sources. If the recipe fails, do some more research and try a different recipe or technique. Mette Blomsterberg is always a good source.

Hi there! I just came across your blog whilst trying to research Danish pastries. My boyfriend and I have set ourselves a ‘cooking around the world’ challenge where we will aim to cook a dish from every country, and we’re up to Denmark, so I thought Danish pastries would be ideal (and I found your kanelsnegle recipe which looks delicious). There are three online sources that I use to order Danish product and all of them carry different types of cheeses. Keep in mind that it varies what they have in stock at different times. I have ordered Gamle Ole online in the past but usually have my parents mail it to me or pick it up when I go home.

I´m Irene, from Spain. I am currently studying in Denmark and I am enjoying my experience here. It is pretty clear that Danes love food! 🙂 and I fell in love with some of the Danish recipes! The other day, my roomate, who is Danish, cooked the amazing “gulerodsbrud” or “Danish carrot buns”. It was absolutely delicious and I ended up here looking for the recipe on the internet. I cannot wait to cook it for my family when I have the chance! I am sure I will follow your website from now on when I´m curious on trying a new Danish recipe. Have a great day!
Gulerodsbrud is one of my favorite recipes as well. I bake them periodically, freeze them and pull them out as needed for a lunch sandwich. Hope you like them.
Hi Gitte! I’m Italian, but I’ve been in Denmark for about one year and a half. I was studying before in Horsens and then in Aarhus. I really really love your country, also because I had great and meeting experiences there. I had a food glog too, with a section about sweets from all over the world and, of course, I prepared the Kanelsnegle! I love them and I like cinnamon a lot! I really hope to be back in DK one day!

My mom was from Bornholm and faced similar challenges in the kitchen. She had no internet to find recipes and had to write letters to ask her mom a question. I remember it took about 3 weeks to get an answer! I am now making many things she did and your blog is great! Is there a recipe for Danish layer cake?

The best recipe I’ve ever made (and I’m Danish). As a kid I used to grind the mixture using a hand grinder 3 times for my mother just so I could have it. I think the béchamel gives it a lift.

Was looking at your recipe for øllebrød and saw your question about pasteurized egg yolks. You can buy pasteurized eggs, and just separate them. Save the whites for some other use, like souffle’ or something.

Hello Gitte! I have made quite a few recipes of yours over the years and tonight read your entire blog and can’t wait to try more of them. My grandmother is Danish and my grandfather Swedish and I lived in Stockholm with them when I was a child. I miss so many of my grandmother’s Danish recipes and quite a few of yours taste like her’s did! Sadly, I wasn’t interested in cooking when she still was well enough to cook so I have to find recipes online or in books to try to replicate her cooking. I was wondering if you ever remembered having a burger-type patty made with pork and served with sauteed onions and gravy? I always remember it as a Danish dish, but it may have been Swedish or something.

Vanessa, it sounds like “Bøf” but that is a beef dish, so if it was pork for sure it must have been “Karbonader”. I don’t have either of those dishes on my blog, as I tend to do more baking, but simple just go to google.dk and search for those words and use google translate. It won’t be a perfect translation but it should be good enough for you to understand. Oh and type the word “opskrift” after the word “Karbonader” for example, which means recipe. Good luck in your search. 🙂

Min mor er dansk, og selvom jeg er født og voksede op i USA er vi meget tæt knyttet til familie og venner i Danmark. Og vi spiste faktisk dansk mad hjemme, så det er det jeg er mest vandt til.
Jeg er i gang med din brunkage opskrift (den oprindelige) og har to spørgsmål — skal degen virkelig køles overnat, eller kan vi nøjes med nogle timer i køleskabet, og hedder de brunkager på dansk? Jeg har altid kun hørt brune kager.

Hello there! I fell across your blog while looking for an aebleskiver recipe online, but I ended up also finding your ris a la mande recipe. My father’s grandmother was Danish and it is always this time of year that he gets nostalgic of all the wonderful Danish holiday foods Nanny made that he misses. Hej Gitte! I am from Argentina but my grandfather´s father came from Denmark in 1899 and so the many danish recipes have been followed generation after generation. We don´t usually cook danish food, but we do for special ocasions. ymerdrys! I was an exchange student to Denmark in 1976 (really? can it be so long ago?) I loved ymer… and of course it is not to be found in the US. But I never knew what was in the topping nor did I realize it had a name. So I learned something new after all this time. I’m going to make it and try it on top of my Greek Yogurt. I buy dark rye bread often – although it never seems as good as I remember the Rugbrød in Denmark. I miss smørrebrød and rød pølse from the street vendors. I do not miss the liverpaste, however! I will be exploring your blog. Thanks for writing it!

Just made your Danish Bun recipe and they came out very good! My boyfriend is Danish and only recently moved to California a year ago. Tak Gitte! I’m married to a Dane whom is the only member of the family born in the US. Raised on traditional Danish food! I have many Danish cookbooks, but they only seem to have very traditional foods. The Danish family was just here for a big family wedding and we all feasted on more modern Danish cooking. Now, we are all going thru withdrawal. Your blog is going to be very helpful in keeping us fed!

Hi Gitte, I am now Canadian but originally grew up in Germany of German dad and Danish mom before emigrating to Nova Scotia in 1970. My mom was from Roskilde where her family owned Schmidt’s Konditori. She was an amazing cook who unfortunately often did not need to use written recipes so your blog has been great in finding some of those familiar foods she used to prepare. I can’t tell you how excited I was to stumble across your blog, I love that you mention the traditions behind the recipes! My father is from Aalborg and so you can guess that his heritage was a large part of my growing up and his many traditions have been passed down, especially at Christmas. Aebleskivers are a weekend tradition in my home and I have two pans, LOL, we eat them with strawberry jam and sugar, my kids love them. i also make the Krumkake but my question is where did you get your pan and what is the name of it, I like your pattern more than mine, I’d like to see if I can buy it online. We have a Scandinavian Specialty store here in Seattle and also a bakery that sells pretty amazing pastries, I’ll one year master the danish pastry. Thanks again for your blog.

I noticed a few of your followers commented about changing from grams to cups and ounces. I use to have the same problem until I went over to Denmark and while I was shopping at a grocery store I picked up 2 measuring cups (1 large and 1 small) and some measuring spoons. It has helped so much in my recipes with the dry ingredients

I was looking for a recipe for brunsviger, and came across your blog.
I came to Australia with my famiy in 1958 when I was nine. My mother and sister kept all their Danish recipes secret from me. I went back to Denmark for a trip in 2003, and found my first Danish cook book.( My sister took my mother’s when she passed away). My Danish cousins have been a great help to reinvigerate my Danish Cooking skills, and my Danish language as well.
Your blog has been a wonderful find on this Christmas Eve. I will be cooking Brunsviger for breakfast tomorrow and I will be thinking fondly of you.
