Karrysalat – Danish Curry Salad

I never liked Danish Karrysalat until I made a homemade version to serve at my Danish Christmas luncheon. You may ask, why did I make it in the first place if I knew I didn’t like it. Well traditionally Karrysalat is a classic topping for marinated herring and marinated herring is a “must” at any self-respecting Danish Christmas luncheon table. And when I tasted my homemade Karrysalat I was instantly hooked because it is so much better than the store-bought kind. Like I mentioned, it’s is served with marinated herring on top of Rugbrød (dark Rye bread) but I could eat it on top of just about any kind of lunch meat. This is super delicious and I recommend that you whip up a batch immediately and enjoy. 🙂

Karrysalat

Karrysalat – Curry salad

Ingredients:

3 hard boiled eggs, diced

5 sweet Gherkins, diced (Cornichoner in Danish)

1 tablespoons minced red onion

1 small apple, diced

2 deciliter mayonaise

2 tablespoons creme fraiche

1 teaspoon curry

1/2 teaspoon dijon mustard

1/4-1/2 teaspoon sea salt

1/4 teaspoon pepper

Directions:

Dice eggs, gherkins, onion and apple into small pieces. Add remaining ingredients and stir gently to combine. Allow salad to rest in refrigerator for at least a couple of hours before serving. Will keep for about 1 week in refrigerator. Enjoy!

    Lavede dette igår og det er terapi for mig da jeg ikke skal holde jul i Dk men får besøg af den engelske familie som elsker dansk mad. Så mange tak fordi du deler opskrifter her på nettet. Smager super lækkert.

    thank you for sharing! i just returned from first trip to DK yesterday! I met my boyfriend’s family and they fed me traditional Danish food all week 🙂 His parents are now coming here for a month so I want to try and have some food prepared for them 🙂 Wish me luck!

    Having just returned from a trip to Denmark, I am so motivated to make Smorrebrod. I loved the curried herring we had while we were there, thank you for these delicious looking recipes!

    I just found your blog while searching a rugbroed recipe and I really liked it. But I can’t believe you have no flaeskesteg recipe here.

      I hear you, truth of the matter is that the only thing on a Flæskesteg that I like is the crackling (sværet) so it would be waistful for me to cook. Perhaps one day if I have a large crowd of Danes over for dinner…. 🙂

    Sounds Great! I haven’t had any herring in years – hadn’t thought of herring in years. I will have to see if I can find some.

    Ooh this sounds delicious. A few years ago my mother discovered apple, red onion, mayonnaise and curry powder as a topping for herring on ryebread which I’ve been making ever since. So I imagine it is a stripped down version of your wonderful recipe which I’d love to try – thank you for sharing:-)
